Pumpkin French Toast

Pumpkin French toast! We love breakfast around here and especially French toast. This is the perfect fall breakfast. .

Pumpkin French Toast
Ingredients:
1 loaf French bread sliced 1” thick
4 eggs
3/4 c. milk (we use almond milk)
1/2 c. pumpkin
1 tsp. pumpkin spice
1 tsp. cinnamon
1 tsp. vanilla .
Instructions:
1-In large mixing bowl, whisk together all ingredients.
2-Heat skillet and spray with coconut oil.
3- Soak bread in pumpkin mixture on both sides and cook on skillet about 2-4 minutes each side! .

We love the vanilla bean syrup from Trader Joe’s. Powder sugar and whip cream are always a must when we make any French toast. When we have extra time we either make my mom’s famous Buttermilk syrup or my Grandma Marjorie’s famous Cinnamon syrup…both so delicious! Not as healthy but we usually make it on special occasions like, family reunions, holidays, conference weekend, etc..

Buttermilk Syrup:
1 c. Sugar
1/2 c. Butter
1/2 c. Buttermilk
1 tsp. Vanilla
1 tsp. Baking soda .
Bring to boil buttermilk, butter, sugar and then remove from heat and add vanilla and baking soda.

Cinnamon Syrup:
2 c. Sugar
1 c. Corn syrup
1/2 c. Water
I can evaporated milk
2 tsp. Vanilla
1 tsp. Cinnamon .
Bring to boil sugar, corn syrup, water. Remove from heat and add vanilla, cinnamon, evaporated milk and stir.
